- Gluten Free Bread
- 1 half avocado
- 1 egg (only the egg white)
This is a super easy lunch that anyone can make! Sometimes when you are trying to eat healthy, watch your weight or even if you are trying to loose some weight sandwiches usually seem like a bad option. Which can be true but there are ways to make it healthier and good for you. The first step is watching the bread you choose. Never ever use plain white bread, it is only bad for you and does not give you anything that your body needs. Whole wheat, whole grain or gluten free bread are definitely the best options ( I have started using gluten free bread because I feel lighter and better after eating that in comparison to whole wheat). I toast the bread and then I start making my egg whites. I love my sandwiches warm so adding the egg while toasting the bread is the perfect little warmth with the cold veggies. Then you just cut up the avo and "smash" is on both pieces of toast as a base layer. Then the spinach and cucumber on one side and then the egg white on the other.
For this sandwich I actually ended up combining the two and creating one giant sandwich. The combination of these ingredients creates an incredibly healthy, delicious, savory and filling lunch. It doesn't take long at all and the ingredients are so simple. If I could eat a sandwich every day for lunch I would eat this beaut. :)
P.s I am practically drooling thinking about this sandwich right now.
