Quinoa Bowl: (1 serving) 


  • Quinoa 
  • 1 Egg
  • Half Avo 
  • Carrots 
  • Pistachios 
  • Tomato Salsa 

Cook the appropriate serving size of quinoa (can depend on the pack). While that is cooking, usually takes 15ish minutes, prepare the rest of the ingredients. Cook your egg however you please, I tend to go with hard boiled because you avoid adding extra unwanted oil to the meal. Cut up the avo and carrots and you can either thinly slice a tomato or use tomato salsa which you can find in some store. When I say tomato salsa I do not mean the salsa that many consume with chips and guac. The one I use is "Sunbelt Organic Fresh Organic Salsa" its a combination of tomatoes, cucumber, peppers, onion, cilantro, lime, garlic and chili pepper and a hint of salt. By adding this to the meal you get some veggies and it adds taste to the plain quinoa. 

Then really once the quinoa and egg are cooking you can add all the ingredients to a bowl. The best thing about this quinoa bowls is that you can add really anything you want. It's a matter of what your taste buds are craving. I like to add a dash of pepper and a couple of pistachios (for crunch) to finish it off. It's healthy, delicious and super quick and easy!
