- Sweet potato
- Green beans
- Olive oil
- Himalayan Pink Salt
1. Heat oven to 400/450 and place all of the sweet potatoes out on a cookie sheet, then spread a little of the basil, salt and pepper over the sweet potatoes. You really only need a little to give the potatoes extra flavor. Roast in oven for about 20 minutes (really just depending on how powerful your oven is and how thin they are sliced). Just check on them and pay attention to when they seem ready. They will be best (in my opinion) when they have a very dark orange color with darker edges.
2. While the sweet potatoes are in the oven prepare the rest of the veggies (green beans, cauliflower and peppers). Once there is about 15 minutes left on the timer for your sweet potatoes place the green beans, cauliflower in the oven as well. Add some olive oil. Then I add a sprinkle of salt and pepper to the veggies before placing them into the oven.
3. Once the sweet potatoes are looking golden and ready, take them out of the oven along with your oven roasted veggies.
4. Place the sweet potatoes into a bowl or on a plate (whichever) and add the veggies. Either pile them on top or divide up your buddha bowl into little sections. This is totally personally based and is just a part of the fun of creating dinner masterpieces.
And thats it! Super easy, quick, fun and utterly delicious! You can top the whole thing off with some hot sauce or you can just it is as it is (it really doesn't need a sauce). I love this dinner because sweet potatoes are so great for you and give you a bunch of nutrients you need but in a delicious and fun form. You can never really go wrong with sweet potatoes! :)
