December 5th: "Bage Dag"

Welcome back! One of the glorious things about the holidays is the amazing pastries and baking that takes place. There are so many different Christmas treats from all around the world but of course I am biased and consider Danish cookies to be the best. I honestly don’t even know where to begin with this, there's just so many too choose from. But we must start somewhere, right? There are just so many classics, pebbernøder, vanilie kranse, kransekage, brunkager, honning kage, etc. Now, if your not Danish you'll have absolutely no idea what any of these words that I just wrote on the page mean, so I'll add a link that has some more info. There are some recipes to but this is from a "Nordic" cookbook, so some of them aren't exactly Danish. I'll add some "our" tradition Danish recipes to the bottom of this post if you are in the mood for some delicious Danish delights. :)

Baking with family is such a classic Christmas tradition for so many. Blasting Christmas music, lighting some candles and getting down and dirty in the kitchen ;). For my family, there is one cookie that has always been a constant during this season, pebbernøder. They are super easy, so everyone in the family can partake in the fun! Even as my teenage brother who's "too cool" for somethings, we were still able to get him to participate last year. I'm sure well be able to make it happen again this year, you can always bribe someone with fresh baked goods.

Note to all of you healthy living people, it is very hard to get your childhood Christmas cookies to taste good when you try to make them healthier. I wouldn't consider my first attempt a complete fail but they weren't exactly the revolutionary cookies I were hoping they would be. My second attempt however was much more successful, which is the recipe I have added below. Note though, that these cookies are not healthy. Far from it, but small substitutions and less sugar does help just that little bit. But as my mother always says, Christmas cookies are not suppose to be healthy. The point of a "Bage Dag" or Bake Day, is to just set a day to just go crazy in the kitchen and bake all your favorites with your loved ones! So pull out the apron and some sugar, turn up the speakers and have a wonderful day!

Recipes: 

Mommy's Pebbernøder: 

  • 250 g flour

  • 100 g butter

  • 175 g sugar

  • 1 egg

  • 1/2 tsp. white pepper

  • 1/2 tsp. ginger

  • 1/2 tsp. nellike

  • 1/2 tsp. cinnamon

  • Optional: chopped almonds

Bake at 175 C until slightly brown (10ish minutes)

Mor's Pebbernødder:

  • 250 g mel

  • 100 g smor

  • 175 g sukker

  • 1 æg

  • 1/2 dl. Fløde

  • 1/2 tsk. Hvidpeber

  • 1/2 tsk. Ingefær

  • 1/2 tsk. Nellike

  • 1/2 tsk. Kanel

  • Finthakkede mandler

Mormor's (grandmas) Ginger Cookies

  • 250 g flour

  • 2 tsp. ginger

  • 1 tsp. cinnamon

  • 1/2 tsp. nelliker

  • 1/2 tsp. natron

  • 100 g butter

  • 250 g sugar

  • 10 g yeast

  • 1 egg

175 C 9-10 min. (watch carefully - grandma's recipe did not come with proper instructions)
