The only way to survive finals is to take a day to splurge on a delicious lunch. I decided to bring my studies to Whole Foods on Sunday and indulge in a delicious lunch and some Evolution Fresh juice (super green is amazing).

Mecha Noodle Bar
Had a mouth watering dinner this past Saturday at Mecha Noodle Bar in Fairfield CT. Definitely a new favorite spot. The vibe is buzzing and so upbeat. The food is beyond amazing. The service is friendly and fun. The ambiance was simple, contemporary yet elegant in a sense. Such a wonderful experience and I can not wait to go back!
p.s the vegetarian ramen was to die for!

Flash Back Friday
A little #FBF because I miss the beach and Nantucket is beautiful. The sunsets are breath taking. Shout out to my mum for snapping a picture of me trying to catch the sunset.
A little reading and some Swedish muesli for a mid-morning chill mesh; not much can top that.
Hygge is a Danish concept that really doesn't have a true English translation. It's a concept that is continued year around by all Danish families, but especially during the holiday season. Hygge is a cozy, comfy sort of thing, I'm not entirely sure how to describe it in a way so that it gets the credit it deserves. Hygge can be snuggled up on the couch watching a movie, reading a book or drinking some tea and chatting. It can be with friends, family and love ones; or really anyone for that matter.
During Christmas time our favorite way to hygge is by pilling onto the couch, eating Æbleskiver, drinking hot coco and watching movies or our "christmas holiday tv show" (as we call it) "Homeland". Nothing beats that quality family time.
This past Sunday my family and I tried something new in the kitchen for our Sunday morning breakfast. Sunday morning sometimes call for pancakes and as delicious and fluff as pancakes can be, they aren't the healthiest option. So we tried a healthier version! This was a recipe I found on Pinterest a while back but had never given it a try. When I mentioned the idea of it to my dad he jumped right on board; he was actually the one to make them! :) Best of all they were a huge success!! Well for most of the family, my brother wasn't a huge fan of the healthy swap. I will attach the recipe in the health section!!
