Whole Wheat Spelt Carrot Boller

Since I was little there has always been one thing that my mom always made for whenever anyone in my family had a birthday; and that delicious thing would be "boller" Boller is a classic danish food that people eat for breakfast, lunch or afternoon coffee (aka snack time). They are essentially like rolls or tiny little breads. Weird explanation but that’s the only way I know how too when theres no specific translation. 

My point is that I have had these for as long as I can remember and I have always loved them. The other day Ihad the greatest craving of all time for these fluffy delicious wonders of the world but having moved away from home (and to a completely different continent) I decided I would try making them on my own. Now I love finding different kinds of foods and making healthier versions of them that are still just as delicious. Which is what I decided to do with this recipe. I did some research on different recipes and tinkered here and there, which lead to this recipe! 

My problem with all of the recipes was that there was plain old white flour in every single one and ew no. We want healthy and nutritious creations here on Sea Salt and Poms. I have never really baked before so I didn't know if they would be stale and taste like cardboard but they were the exact opposite! A wonderful surprise! Adding the carrots to the mix gives it that extra tad of flavor and also helps fluff them up, which is exactly what you want in some delicious, warm, fresh out of the oven boller! :)They go with pretty much anything so get as creative as you want, whether its for breakfast, lunch or tea time. 

These are perfect for any time of year but the best time, in my opinion, is in the colder months when all you want to do is snuggle up on the couch with a cup of tea or hot coco and watch a movie while devouring something delicious!

Ingredients:

  • 25 g yeast
  • 3 1/2 dl water
  • 1 tbs honey
  • 25 g oil or butter
  • 1 egg
  • 200 g shredded carrot
  • 1 tsp salt
  • 550 g whole wheat flour
  • 100 g spelt flour
  • 75 g seeds - sunflower, pumpkin and flax

Instructions:

  1. Add the yeast to the water and stir through.
  2. Once stirred through add the honey, oil, egg, carrots and salt. Mix thoroughly.
  3. Add the flour and seeds and mix it all together.
  4. Leave the dough to set for at least and 1 1/2 hours
  5. Once the dough is ready roll it into little balls and bake in the oven for about 20 minutes (or until slightly golden on the top)
  6. Let them cool for a little before serving
