I posted this back in June on my instagram but never got around to writing an actual post about it. You might think that June is an odd time to post a hot chocolate recipe, and granted it kind of was - but that day was incredibly gloomy and quite chilly. Now that we are in October, it is perfect weather for hot coco. It's quite (very) dark in the mornings and the sun goes down before you know it. On top of that it was incredibly cold. Not chilly, just straight up cold. It almost wintery. But I could go on about Denmarks weather foreverrr but no need for that!
Like most of my recipes, this came to through simply playing around in the kitchen and ending up with something delicious and nutritious.
I loveddd hot chocolate as a kid and in the winter, when my brother and I would come home from school and our amazing mumma would have made her amazing fresh baked buns and hot chocolate for us. Not every day, obviously but definitely a decent amount of times throughout those chilly fall months and cold winter months. IT WAS HEAVEN! We absolutely loved it - wasn't exactly the healthiest but it was so cozy! We still do it now, during the Christmas holiday, while we watch a movie together - ugh! nothing better than the fire place going, something warm in your cup, surrounded by loved ones and watching a movie together. But I'm getting carried away - mum and I talked about Christmas this weekend - yes we've already started to slowly get excited for the most wonderful time of year. But that's all I will say about that... for now.
Back to the magic collagen hot coco! This hot chocolate is vegan, paleo, gluten free, sugar free, basically everything free but all the good stuff! It's 6 simple ingredients and all you have to do it bring it all the boil and then blend it. But it's also possible to enjoy it without blending it. Then I just recommend that you don't add the date and just whisk it all together instead :).
There are all the benefits of the collagen (which I will make a separate post about ASAP) and there are the benefits from raw cocoa and cinnamon - which each bring something not only nutritious but also delicious into the hot coco!

- 1 cup almond milk
- 1 tbs raw cocoa
- 1 tsp cinnamon
- Vitalproteins collagen
- 1 tbs coconut butter
- 2 dates (no dates if you aren't going to blend it)
1. Add all the ingredients into a small pot and turn on the stove to medium-hot
2. Stir all the ingredients together while the hot chocolate slowly comes to a boil
3. Once the hot chocolate is just boiling, pour it into your blender and blend it all up - this will also get it nice and frothy!
4. Pour into your favorite mug and enjoy while you work, watch a movie, study or read a good book!
