Hellooo beautiful beings of Earth! So if any of you are currently living in Denmark, then you'll know what I mean when I ask the question, "will we ever get Spring?"... It is the end of April, it's May next week, and we've had snow three times this week. SNOW PEOPLE. SNOW. That is unacceptable and slightly concerning, but the weather men and woman are promising a change soon, so I'm staying hopeful. Quite crazy though and just a little bit miserable.
And, in the spirit of waiting and hoping for Spring I thought I would share my favorite minimalistic salad with you all! It is ridiculously easy, nutritious and SUPER yummy! Plus it really is perfect for a warm spring/summer day to enjoy while sitting in the sunshine! Summer is most definitely the best time for salads - I actually crave a cold, delicious salad during the summer months. Which is in complete contrast of the carby comfort food I crave in the cold winter months... Another reason to why summer is the best! AND WE'RE SO CLOSE!
- lettuce of choice
- cherry tomatoes
- chicken *optional
- olive oil
The lemon olive oil dressing on this salad is amazing because of how light it is and it works great on almost all salads. It's the same one I use for my Greek salad! It's pretty self explanatory from there, just chop up your lettuce, half or quarter your tomatoes and cucumber, chop up your avocado and chicken, then all you have to do is toss it all together.
Now you really only need a little sprinkle of olive oil and about a pinky finger think slice of lemon that you then squeeze over the salad to give it that citrus freshness! Top it all of with a little pepper and you are set with a super easy, nutritious salad that is perfect for lunch or a side to dinner.
I bring this salad to uni for lunch all the time, when I'm not feeling the green smoothie... The trick to keeping your avo from turning brown is to toss the seed in the container and then the lemon will also help to keep the avo fresh and delicious!
