Not only is it the most important meal of the day but it is my FAVORITE meal of the day! Breakfast is just awesome. I mean you can literally eat it for every meal if you want to, there are so many yummy options, both savory and sweet, and it's what kick starts your day everyday. This wonderful meal is what sets you out on your day, which is why it is so important.
I can easily get bored with eating the same thing, which is why I am always making new things for dinner (no matter how tired I am), but I have had the same thing for breakfast almost every single day for the past couple of months. And it's just because it is so damn good.
When winter started rolling around, it just meant cold. Coldness was going to take over our lives, the days would get shorter, it would be dark when we got up in the morning and it would be dark before we made it home again. Which is why I started my day with a big ol' bowl of comfort. Porridge.
With the exception of some weekends and travel days, I had my vegan chai porridge every morning. Whether it was before class or after a morning workout, it was a true commitment. It easy, yet full of life, it's delicious, yet healthy, it really is a bowl of comfort. Which is exactly what you need when you feel like darkness is completely consuming your life.
Porridge may sound dry and boring to many of you but I promise you, you can be so creative with it! Some of my favorite options are:
- apple cinnamon
- bursting blue berry
- banana coconut almond butter (which is a current daily)
And these are just some that are a little more "recipe" like, which they have grown to become because I constantly have them so I have had some time to experiment with what works best! But really, with porridge you can just add whatever you desire and make it however you desire!
